On your journey of finding your favorite homemade matcha latte, you can get overwhelmed by all the different types of matcha. There are so many factors that set one cup of matcha apart from another cup. Amongst one of them is the so-called ‘grade’. In the Western world, matcha is divided into three different grades: ceremonial, premium, and culinary. Each offers unique qualities in terms of flavour, colour, texture, and intended use. Be aware that there is no regulation or standardization for matcha to be considered ceremonial, premium, or culinary. Any company or brand can call their matcha "ceremonial," so you need to do your research and check all the factors that influence quality.
Ceremonial Grade
Colour: has a rich, bright green colour, indicating high levels of chlorophyll.
Flavour: slightly sweet, a little earthy, umami, with just a hint of bitterness.
Texture: smooth, fine powder that dissolves easily in water and creates a velvet-like consistency.
Nutrients: contains higher caffeine and l-theanine, providing sustained energy and focus.
Premium Grade
Colour: vibrant green, but less bright than ceremonial grade.
Flavour: more bitter than ceremonial grade, but balanced with some sweetness.
Texture: fine powder, though not as smooth as ceremonial grade; dissolves well in liquids.
Nutrients: contains caffeine and l-theanine, though less than ceremonial grade.
Culinary Grade
Colour: either dull green or dark green with a yellowish glow.
Flavour: strong, on the bitter side; perfect for recipes.
Texture: less smooth, doesn’t dissolve well in water but blends well in recipes.
Nutrients: lower levels of caffeine and l-theanine.
Which Matcha Grade is for You?
That depends on your budget and purpose—whether for daily sipping or culinary adventures. By understanding the differences between the different grades, you can make a conscious decision that supports you.
